Biodata: 
Kayitesi is a senior lecturer at the University of Johannesburg, South Africa (SA). She obtained an MSc (Agric) and PhD from the University of Pretoria (SA) in 2010 and 2013 respectively. Kayitesi has expertise in food science and technology: she is exploring the use of both traditional and emerging food processing technologies to improve the nutritional quality, functional and health-promoting properties, as well as safety of plant-based foods. Her interest is also in adding value to under-researched, underutilised and indigenous African food crops. She was awarded the 2015 Food Science Educator of the month by the Institute of Food Technologists and has also received an African Women in Agricultural Research Development (AWARD) fellowship, in 2009. The latter is a highly competitive fellowship programme that offers two-year fellowships designed to fast track the careers of African women scientist/students and professionals showing leadership potential to deliver pro-poor agricultural research and development that benefit the rural communities. She is also a 2007 fellow of Technology Entertainment Design (TED) global fellowship.
